Fiesta Bean Salad w/ Pistachio Cream

I was feeling like eating mexican food, and decided to create fiesta bean salad with pistachio cream!

Ingredients:

  • 3/4 Cup Organic Corn

  • 3/4 Cup Red Beans

  • 3/4 Cup Black Beans

  • 3/4 Cup Garbonzo Beans

  • 3/4 Cup Cucumber

  • 3/4 Cup Red Cabbage

  • 1/4 Cup Red Onion

  • 3/4 Cup Mixed Bell Peppers

  • 3/4 Cup Carrots

  • Pinch of Cayenne Pepper

  • 1 Tsp Olive Oil

  • 1 Tsp Gluten Free Tamari

  • 1 Lemon Juice

  • 1 Tsp Cumin

  • 1 Tsp Turmeric Powder

Pistachio Cream:

1/2 Cup Pistachio

3/4 Cup Spinach

Olive Oil

1 Tsp Apple Cider Vinegar

1 Tsp Maple Syrup

Pinch of Cayenne Pepper

Blend in blender or food processor!

Directions:

Mixed together, served with pistachio cream sauce! ENJOY
