I made an EPIC banana coconut cream pie today! Gluten Free, Organic, and Delicious! :)
Ingredients:
Crust
3/4 cup Flaxmeal
1 cup Walnuts
1/4 cup coconut flakes
7-10 Pitted Meedjol Dates
Pinch of Lemon Zest
2-3 Tablespoon or as needed Coconut Oil
Filling
Coconut Meat from two coconuts
1 Banana
3/4 cup Coconut Shortening or your favorite thickener
Toppings
1 packet of Raspberries
2-3 chopped Bananas
1 packet Blueberries
Instructions:
Place every crust ingredient in food processor and process until you get a fine dough, if it doesn't blend add little more coconut oil. Form pie crust down on pie pan.
In a food processor blend filling ingredients until smooth, add to pie crust and get rid of any bubbles.
Top with toppings and ENJOY! Recommend serve chilled at least for 30 mins!
