Japanese Sushi Hand Rolls!

Summer is here, this is the perfect light flavorful meal to serve that will energize you and nourish your body! This is my spin on Japanese Sushi hand rolls!

Cauliflower Sushi Rice

  • 1/2 Caulifower Floret

  • 2 Tablespoon Olive Oil

  • Sea Salt to Taste

  • 1/2 Lemon Juice

  • 3 Sheet of Nori Seaweed for Wrapping

Blend in food processor until caulifower becomes a rice like consistency!

Carrot Ginger Sesame Dressing

  • 1 Carrot

  • 3/4 Cup Sushi Ginger

  • 1 Teaspoon of Seasame Oil

  • 1 Teaspoon of Seasame Seeds

  • 1 Teaspoon of Gluten Free Soy Sauce

Blend in food processor, or blender! Add more liquie depending how thick you like sauce.

Filling

  • 3/4 Cup Julienned Carrots

  • 3/4 Cup Julienned Cucumbers

  • 3/4 Cup Julienned Zucchini

  • 3/4 Cup Julienned Bell Pepper

  • 3/4 Cup Sprouts

  • 3/4 Cup Favorite Mushrooms

DIRECTIONS:

  1. Prepare cauliflower rice, ginger carrot sesame dressing, fold nori sheet into half and place cauliflower rice at very edge corner, top with dressing and vegetables & mushrooms. Wrap tightly and serve with extra ginger sauce on side!

  2. ENJOY!
